Ingredients
- 1 link of Kielbasa sausage, sliced 1-inch rounds
- 6-8 baby potatoes, quartered
- 1 red bell pepper, thickly sliced
- 1 tablespoon olive oil (or avocado oil)
Instructions
- Preheat your air fryer to 370°F.
- In a large bowl, toss the potatoes, sausage, and bell peppers with olive oil. For the best texture, start by cooking just the potatoes first.
- Add potatoes to the air fryer basket in a single layer and cook for 4 minutes, shaking halfway through.
- Add the sliced kielbasa and bell peppers to the basket and cook for another 8 minutes, shaking or flipping every few minutes for even browning.
- Serve immediately! Optional: sprinkle with fresh herbs or a little garlic powder for extra flavor.
Notes
- Cut evenly: Try to keep all the pieces the same size so everything cooks at the same rate.
- Don't overcrowd: Cook in batches if needed. Overcrowding will steam the ingredients instead of crisping them.
- Crispy potatoes? Let them air fry solo for a few minutes before adding the kielbasa and peppers—they take the longest to cook.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 3–4 minutes.
