Crock Pot Kielbasa and Potatoes

Ingredients
- 1 14 ounce package kielbasa sausage, sliced into 1/2-inch rounds
- 1 1/2 pounds pre-diced potatoes
- 1 large onion diced
- 2 cloves garlic minced
- 1 cup chicken broth
- 1/4 cup Dijon mustard
- 1 tablespoon honey
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a 6-quart crock pot, combine the sliced kielbasa sausage, pre-diced potatoes, diced onion, and minced garlic.
- In a separate bowl, whisk together the broth, Dijon mustard, honey, dried thyme, salt, and pepper until well combined.
- Pour the broth mixture over the kielbasa and potatoes in the crock pot, stirring gently to distribute the liquid evenly.
- Cover the crock pot and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the
- potatoes are tender and the flavors have blended together.
Notes
- Ore-Ida Diced Hash Brown Potatoes is what I used for this recipe or Simply Potatoes Diced Potatoes will work great as well.
- If you want to use fresh potatoes, dice them into 1/2-inch cubes and increase the cooking time by 1-2 hours on low or 30-60 minutes on high.
- Refrigerate the leftovers in an airtight container for up to 5 days.
