Air Fryer Kielbasa and Potatoes

Ingredients

  • 4 medium potatoes
  • 1 large onion
  • 1 red bell pepper
  • Spray oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup barbecue sauce use your favorite
  • 1 pound kielbasa

Instructions

  1. Wash and chop the potatoes, onions and red pepper. Cut them into bite sized pieces and put them into a bowl.
  2. Spray the vegetables in the bowl with a few squirts of spray oil. Then add the garlic powder, salt and pepper to the bowl and toss to mix everything.
  3. Add the barbecue sauce to the bowl and mix again. Then pour the contents of the bowl into the air fryer basket.
  4. Set the air fryer for 400 F for 16 minutes. Shake the basket once or twice as it cooks to make sure it cooks evenly.
  5. Whilte the vegetables cook use a sharp, serrated knife to cut the kielbasa into 1/2 inch pieces.
  6. After the 16 minutes are up add the kielbasa to the air fryer basket and mix everything together.
  7. Air fry at 400 F for another 8 minutes. The potatoes should be browned and tender and the kielbasa should be crispy around the edges.
  8. Put the meal on a serving platter and drizzle it with more barbecue sauce.

Notes

  • You can use a different type of sausage without changing the recipe like smoked sausage, turkey sausage or vegetarian sausage. Just make sure it is precooked.
  • You can also vary the types of vegetables. Sweet potatoes or zucchini work well in this dish. A quick cooking green vegetables like green beans or broccoli could be added when you add the sausage.
  • This recipe fits fine in my large 5.8 quart air fryer. If you have a smaller air fryer you might need to halve the recipe.
