Description
The recipe starts by peeling, coring, and slicing pineapple to about two heaping cups. These slices are gently coated in a mixture of melted butter, maple syrup, and cinnamon, which helps enhance the natural sweetness and adds a subtle spiced flavor. Cooking in the air fryer at 380°F for 12-15 minutes caramelizes the sugars, softens the pineapple, and concentrates its flavors, with a flipping halfway through to ensure even cooking.
The pineapple’s texture becomes tender and slightly caramelized on the edges while retaining enough juiciness. Serving options include enjoying it warm or chilled, making it versatile for different occasions such as a dessert or alongside savory dishes.
An optional chili lime dip made from cashew cream, lime juice, and chili powder adds a creamy, zesty, and mildly spicy element that pairs well with the pineapple’s sweetness. Leftovers should be stored refrigerated in a sealed container and consumed within 2-3 days to maintain quality.
Ingredients
- 2 heaping cups pineapple from approx. ½ small pineapple, sliced
- 1 tablespoon butter melted, optional, vegan; or margarine
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
Optional Chili Lime Dip
- 3 tablespoons cashew cream or vegan mayo
- 1 tablespoon lime juice approx. half a lime
- ½ teaspoon chili powder
Instructions
- Peel, core and slice your pineapple and place about 2 heaping cups worth in a mixing bowl.
- Combine the melted butter, maple syrup and cinnamon in a small bowl, then pour it over your pineapple slices. Mix gently to even coat the slices.
- Then place them in a single layer (slightly overlapping is fine) in your fryer basket and air fry at 380 degrees F for 12-15 minutes, or until caramelized. Flip the pineapple once at the halfway point.
- Enjoy warm or cold, as a side dish or dessert.
Optional Dip
- If making the chili lime dip, combine the 3 ingredients in a small bowl while your pineapple is cooking.
Notes
- Add pineapple slices individually to the air fryer basket to avoid breaking and reduce dripping that can cause smoking.
- Store leftovers in an airtight container in the refrigerator for up to 2 to 3 days.
