Ingredients

  • 1 pound Yukon gold potatoes scrubbed, cut into 3/4-inch chunks
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika optional for color
  • ½ teaspoon dried herbs Italian seasoning, rosemary, thyme, parsley, herbs de Provence all work
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt plus a few pinches
  • ¼ teaspoon ground black pepper
  • OPTIONAL: Parmesan, chopped fresh parsley or chives

Instructions

  1. Place the potatoes in a large bowl and top with the oil, paprika, dried herbs, garlic powder, salt, and black pepper. Toss to coat.
  2. Preheat your air fryer to 400°F. Add the potatoes to the basket and air fryer for 15 to 18 minutes, shaking the basket two to three times throughout, until the potatoes are a nice golden brown and fork tender (if you love extra crispy potatoes, cook 1 to 2 minutes more, until they are done to your liking).
  3. Transfer to a serving bowl or plate. Immediately top with a pinch of additional salt and Parmesan and chives (if using).

  • TO STORE: Place leftover air fryer potatoes in an airtight storage container and refrigerate for 3 to 4 days.
