Ingredients
- 2 medium zucchini cut into half moons
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon garlic salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat your air fryer to 400°F for 5 minutes while you prepare the zucchini.
- Wash, dry and slice your zucchini into semi-thick slices, just shy of an inch, then cut into half moons.
- Dry the cut zucchini, then add them to a mixing bowl.
- Pour the olive oil, smoked paprika, garlic salt and ground black pepper over the top. Toss until well combined.
- Add in the parmesan cheese and toss again, making sure all the pieces all well coated. Pour into a single layer, with no pieces overlapping.
- Air fry for 10 minutes @400°F or until cooked through and golden, then serve.
- Store leftovers in an airtight container in the fridge for a few days.
