Description
The Asian Salad Dressing is a harmonious mixture of ¼ cup olive oil and the acidity of ¼ cup rice vinegar, balanced with 2 to 3 tablespoons of tamari or light soy sauce for saltiness. Toasted sesame oil brings a nutty aroma, while mayonnaise adds creaminess and honey delivers a mild sweetness. Additional depth comes from freshly grated ginger root, and optionally, mirin rice wine and toasted sesame seeds for texture. Simply shaking all ingredients in a jar emulsifies the dressing into a smooth pourable sauce. It produces about one cup of dressing and stores well in the refrigerator for up to 10 days, handy for fresh salads or drizzling over vegetables and grains.
Ingredients
- 1/4 cup olive oil
- 1/4 cup rice vinegar
- 2-3 tablespoons tamari (adjust amount to taste preference; can substitute light soy sauce )
- 2 tablespoons sesame oil toasted
- 2 tablespoons mayonnaise
- 2 tablespoons honey
- brown sugar for low sugar dressing, or 2 tablespoons brown sugar alternative
- 1 teaspoon fresh ginger root very finely grated
- 2 teaspoons mirin optional, Japanese rice wine
- 2 teaspoons sesame seeds optional if you want seeds/texture in your dressing, toasted
Instructions
- Place everything in jar with a lid and shake until smooth and emulsified. Store in the fridge where it will keep for up to 10 days. Makes about 1 cup of dressing.
