Avocado Chicken Salad Pinwheels are the perfect party food, snack, or easy lunch! They are simple to make with a delicious mixture of avocado, shredded chicken, feta cheese, black olives, red onion, and herbs, rolled up in tortillas and sliced. A tasty make-ahead appetizer everyone will love!

Ingredients
- 1 ripe avocado
- 1 lime juiced
- 1 garlic clove pressed
- 2 tbsp mayonnaise lite, or greek yogurt
- 1/2 tsp chili flakes
- 1 1/2 cups shredded cooked chicken
- 1/2 cup crumbled Feta cheese
- 1/3 cup sliced black olives
- 1/2 small red onion finely diced
- 2 tbsp fresh parsley minced
- kosher salt and pepper to taste
- 4 large wheat tortillas

Instructions
- Mash the avocado in a medium bowl. Add the lime juice, garlic, mayo and chili flakes. Stir to combine. Take 2 spoonfuls of mixture and spread over one of the tortillas.
- Sprinkle it with chicken, feta cheese, olives, red onion and parsley. Season with a pinch of salt and pepper. Repeat with the remaining tortillas.
- Roll the tortillas tightly, then slice into 1⁄2 inch slices.
Notes
- Store any leftovers in an airtight container in the fridge for up to 2 days. We do not recommend freezing these rollups.
