Bacon and Rotel Cups are an easy appetizer perfect for popping! You'll be hooked on these tasty little bites! The best part? You can prep 'em ahead of time!

Ingredients
- 45 mini phyllo shells thawed (3 packages)
- 1 can Mild Rotel drained almost all the way
- 1 cup Bacon cooked and crumbled
- 1 ½ cups Colby jack cheese shredded
- 1 cup mayonnaise
Instructions
- Preheat oven to 350 degrees F. Place phyllo shells on a baking sheet lined with a silicone mat or parchment paper.
- In a large bowl, mix together the Rotel, bacon, and mayonnaise until blended.
- Add in the cheese and stir until completely mixed together.
- Fill the phyllo shells with the bacon/rotel mixture.
- Bake for 30 to 35 minutes. Remove from the oven and serve warm or at room temperature.
Notes
- The original recipe said to bake for 15-20 minutes, so you can start checking them then. If found 30-35 works great for me and gets them nice and crispy!
