For the Dough:

  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (110°F/45°C)
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 teaspoon salt
  • 2 large eggs
  • 4 cups all-purpose flour

For the Filling:

  • ½ pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup cooked and crumbled bacon
  • 6 large eggs, scrambled
  • ¼ cup chopped green onions
  • salt and pepper to taste

For the Topping:

  • 2 tablespoons melted butter
  • ¼ cup shredded cheddar cheese
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

Prepare the Dough:

  1. In a large mixing bowl, combine the warm milk and active dry yeast. Let sit for 5 minutes until frothy.
  2. Add the granulated sugar, melted butter, salt, and eggs to the yeast mixture. Mix until well combined.
  3. Gradually add the flour, mixing until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5-7 minutes, or until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Filling:

  1. In a medium bowl, combine the cooked breakfast sausage, shredded cheddar cheese, crumbled bacon, scrambled eggs, chopped green onions, salt, and pepper. Mix well.

Assemble the Rolls:

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Roll out the risen dough into a large rectangle, about ¼-inch thick.
  3. Spread the filling evenly over the dough.
  4. Starting from the long side, tightly roll up the dough into a log. Cut into 12 equal slices.
  5. Place the rolls in the prepared baking dish. Cover with a clean kitchen towel and let rise for another 30 minutes.

Bake the Rolls:
