Cardamom Cake

Cardamom Cake combines fragrant cardamom spice with sweet brown sugar and chopped apples for a moist, tender cake. Butter and eggs enrich the batter, producing a golden, flavorful cake that can be served warm or cooled.

Description

This cake blends salted butter melted with brown sugar and vanilla, into which eggs are beaten for richness. Flour, ground cardamom, and baking powder are mixed separately then gently folded into the wet ingredients to create a smooth batter. Fresh peeled and chopped apples add moisture and bursts of sweet-tart flavor evenly distributed throughout the cake.

Baked in a greased 9x13-inch pan at 350°F for 20 to 25 minutes, the cake develops a moist crumb with aromatic cardamom notes. Testing with a toothpick ensures proper doneness without dryness. The cake can be served warm directly from the pan or cooled for later serving.

This cake works well as a snack or dessert, featuring a balance between lightly spiced and fruity flavors, with soft texture complemented by the tender apple pieces.

Ingredients

  • ½ c butter salted
  • 1 ½ c brown sugar
  • 1 tablespoon vanilla
  • 3 egg
  • 1 ½ c flour
  • 1 teaspoon cardamom
  • 1 tablespoon baking powder
  • 2 c apple peeled and chopped to ¼" pieces

Instructions

  1. Preheat oven to 350"F and lightly grease a 9"x13" pan.
  2. Melt butter and then stir in brown sugar and vanilla.  Once stirred well, beat in eggs.
  3. In a 2 cup (or larger) measuring cup, add flour, cardamom and baking powder and mix well, then add to butter mixture and stir gently until combined.
  4. Mix in apples and then pour into baking pan.  
  5. Bake in oven 20-25 minutes. (My oven is on the cool side and took 25 min but I suggest setting your timer for 20 and checking then) Test with a toothpick and when it comes out clean, cake is done. Let cool in pan 10 minutes, then carefully move to cooling rack and serve warm or let cool before putting back in pan to store.
