Cauliflower Mashed Potatoes are a creamy and garlicky side dish that tastes and looks like mashed potatoes but are made with cauliflower.

Ingredients
- 1 head cauliflower, cut into florets (approximately 4 cups)
- ½ cup Parmesan cheese, grated
- 2 tablespoons cream cheese, room temperature
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
- 2 tablespoons unsalted butter
- Chives, chopped for garnish

Instructions
- Boil cauliflower in water for 10-15 minutes, or until tender. (You can also steam cauliflower in a steamer basket or in the microwave.)
- Thoroughly drain the water to avoid a soggy mash. Pat the cauliflower with paper towels to drain any excess water.
- Add the cauliflower to a food processor. Process until smooth.
- To the blender, add parmesan, cream cheese, garlic powder, salt, and pepper. Process again until well blended.
- Transfer to a serving bowl and top with butter.
- Season with salt and pepper to taste.
- Garnish with chopped chives.
