Ingredients
- 1 ½ cups almond flour
- ⅔ cup cheddar cheese shredded
- ½ cup sour cream
- ¼ cup butter melted
- 2 whole eggs
- 1 tablespoon homemade ranch seasoning mix
- 1 tablespoon oat fiber see notes
- 1 tablespoon baking powder
- 2 teaspoons chives chopped
- 2 teaspoons fresh parsley chopped
Instructions
- Preheat the oven to 450°F.
- Add the almond flour, ranch seasoning and baking powder to a bowl and mix using a hand whisk or fork, then set aside.
- In another bowl, add the eggs, sour cream and melted butter, then mix until combined. Add the cheese, parsley and chives into the wet ingredients and continue mixing.
- Add the dry ingredients into the wet and mix.
- Scoop the biscuit mix into a silicone muffin pan (or silicone muffin pan liners) and bake for 10-12 minutes, or until golden.
Notes
- If you don't use the Homemade Ranch Seasoning Mix, you can substitute with 1-2 teaspoons of the store-bought ranch mix. The reason you'll want to use less, is most store bought mixes have MSG and are a little stronger/saltier.
- Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet. - To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.
