Cilantro-Lime Brown Rice Recipe

Ingredients

  • 1 1/2 cups brown rice rinsed
  • 3 cups water
  • 1 teaspoon salt
  • 2 cloves garlic in their skins
  • 1 tablespoon butter
  • 2 limes juiced
  • 1/2 cup cilantro chopped

Instructions

  1. Add the rice, water, salt, and garlic cloves to a pot. Cover with a lid and bring to a boil. Turn the heat down and simmer for 25 minutes. Turn off the heat and let sit with the lid on for another 10 minutes.
  2. Remove the garlic from the rice. Squeeze the garlic out of the skin.
  3. Add the butter to the rice. Stir until the butter has melted.
  4. Add the cilantro and lime juice. Mix and serve.

Notes

  • Rinse the rice before you boil it; this will remove excess starch and prevent it from becoming too sticky.
  • For a milder, sweeter garlic, consider roasting the cloves by putting them in foil with a little olive oil and warming them in the oven. Then add them to the rice, either minced or whole.
  • For more citrus, add lime zest to the rice.
