Coconut Tahini Bliss Balls
Description
The Coconut Tahini Bliss Balls start with processing desiccated coconut and coconut oil into a paste. Almond flour, tahini, vanilla, cinnamon, and a sweetener are added and blended, with almond milk incorporated to adjust the dough's consistency. The mixture is then rolled into small balls and coated with additional desiccated coconut for texture and appearance.
These bliss balls deliver a chewy, slightly dense texture with a nutty richness from tahini and almond flour, complemented by the warm spice of cinnamon and vanilla. Their naturally sweetened profile and coconut coating make them an easy grab-and-go snack or a light dessert option.
They can be stored in the refrigerator for up to a week or frozen for up to three months, making them practical for meal prep or lasting treats. The recipe yields about a dozen bite-sized balls with approximately 1 gram of net carbs each.
Ingredients
- 1 cup desiccated coconut 80g, unsweetened
- ⅓ cup almond flour 35g
- 2 teaspoon coconut oil 9g
- 1 tablespoon tahini 16g
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 -2 teaspoon granulated sweetener or more, to taste
- 1-2 tablespoon almond milk to loosen, as needed
Topping
- ¼ cup desiccated coconut 20g
Instructions
- Blend the shredded coconut in a food processor with the coconut oil until it has formed a paste. This takes a few minutes. A bit of crunch is fine.
- Add the rest of the ingredients and blend again to combine. Add 1 tablespoon of almond milk first and test. Add more if necessary to soften the dough.
- Roll into 12 bite-sized balls.
- Cover the balls with the additional shredded coconut.
Notes
- Each bliss ball has about 1 gram of net carbs, suitable for low-carb diets.
- Store in the refrigerator for up to one week to maintain freshness.
- Freeze leftovers for up to three months; thaw before eating.
