Cottage Cheese Ice Cream
Cottage Cheese Ice Cream is a cool, creamy treat that's a bit tangy. It's made with cottage cheese, which makes it a bit healthier than regular ice cream. It's smooth, tasty, and perfect for anyone looking for something sweet but not too heavy. It's a fun and different way to enjoy ice cream!
Ingredients
- 16 ounces cottage cheese
- ⅓ cup honey or date syrup
- 1 tsp vanilla extract
- ½ tsp sea salt
- 5 pitted dates
Instructions
- To begin, add the cottage cheese, honey, vanilla extract, and sea salt to your blender or food processor.
- Blend until completely creamy. If necessary, use a spatula to scrape down the sides of your blender.
- Next, add in the pitted dates. Blend until the dates reach your desired consistency. The longer you blend, the smaller they become.
- Transfer into a bowl or bread pan and drizzle with more honey. For soft serve, freeze for 1 hour. For hard ice cream, freeze for at least 4 hours.
- Lastly, take it out of the freezer. If needed, allow it to sit at room temperature for a few minutes before scooping!
Notes
- Use full fat cottage cheese for extra creamy ice cream.
- Replace the honey with pure maple syrup or date syrup if desired.
- The longer you blend the dates, the smaller they will become. We like the dates a little chunky!
- The longer you freeze, the harder the ice cream will become. It is soft serve consistency after about 1 hour.
- Store leftovers covered in the freezer for up to 2 weeks.
