Creamy Za'atar Dressing
Description
The dressing combines tahini, a sesame seed paste, with za'atar—a Middle Eastern spice blend—to produce a creamy, flavorful sauce. Grated garlic and fresh lemon juice add sharpness and brightness, balanced by added water to reach a pourable consistency. Sea salt is included to taste depending on the saltiness of the za'atar blend.
Whisking the ingredients together results in a smooth texture that thickens after refrigeration. The dressing can be adjusted for flavor intensity by adding more za'atar, lemon, or salt as desired. It is versatile for use as a salad dressing, drizzle over grains or vegetables, or as a dip.
Proper storage in an airtight container in the refrigerator allows keeping the dressing fresh for up to four days. Before use, a quick whisk or thinning with lemon juice or water helps restore consistency if thickened.
Ingredients
- ⅓ cup tahini
- 3 to 4 teaspoons za'atar seasoning see Notes
- 1 clove garlic grated or minced
- 1 tablespoon lemon juice
- ⅓ cup water
- ½ teaspoon sea salt increase if the za'atar blend you're using doesn't contain salt, fine, to taste
Instructions
- In a bowl, whisk together the tahini, 3 teaspoons za'atar, and garlic.
- Add the lemon, water, and salt, and whisk again until smooth. Taste and add more za'atar, salt, or lemon as desired. The dressing will thicken as it sits, especially after refrigeration.
- Serve now as a dressing, sauce, or dip, or transfer to a lidded jar or container and refrigerate until ready to use. Whisk in a splash of water or lemon juice if the consistency is too thick.
Notes
- Za'atar seasoning can vary in salt content; adjust added salt accordingly for balance.
- Store in an airtight container in the refrigerator for up to 4 days.
- If the dressing thickens after refrigeration, whisk in a bit of water or lemon juice to loosen for serving.
- For za'atar purchases, using the recommended source may ensure freshness and flavor.
