Description

Eel Sauce or Unagi Sauce is prepared by combining Japanese soy sauce, quality mirin, granulated sugar, and optional sake in a saucepan over moderate heat. The mixture is stirred to dissolve sugar, then simmered gently for 10-15 minutes until reduced by nearly half and thickened to a syrupy texture. It is cooled before use, thickening slightly more as it cools.

The sauce offers a sweet, salty, and umami-rich flavor ideal for brushing on grilled eel or using as a dipping sauce. It’s versatile enough to accompany other seafood or grilled dishes needing a sweet glaze. The thick consistency allows it to coat food evenly without running.

Stored in an airtight container in the refrigerator, the sauce remains usable for at least two months, making it convenient to have on hand for multiple meals.

  • 1/2 cup soy sauce Japanese
  • 1/2 cup mirin quality
  • 1/3 cup granulated sugar
  • 2 tablespoons sake (optional, for added flavor)

Instructions

  1. Place all of the ingredients in a small saucepan over medium heat.  Stir until the sugar is completely dissolved.  Bring the mixture to a simmer, then reduce the heat to low.  Allow the sauce to simmer gently for 10-15 minutes, stirring occasionally, or until the sauce has reduced by nearly half and has thickened to a syrup-like consistency.  Remove it from the heat and allow it to cool completely.  It will continue to thicken slightly as it cools.  Transfer the eel sauce to an airtight jar and store it in the refrigerator where it will keep for at least 2 months.
