Firecracker Tofu with Brown Rice

Ingredients
- 1 extra firm tofu must be firm or extra firm, drained and cut into bite sized cubes, block
- 2 egg
- ¼ cup flour
- ½ cup cornstarch possibly more
- ¼ cup vegetable oil or other oil good for frying
- 1 red bell pepper seeded and cut into chunks (bite size, large
- 1 orange bell pepper seeded and cut into chunks (bite size, large
- 1 yellow onion cut into chunks (bite size)
- 3 green onions chopped
- 2 brown rice cooked and kept warm, Success® whole grain bags
- 2 8 oz pineapple chunks packed in juice, not syrup, drained and juice set aside, canned
Ingredients for the Sauce
- 2 cloves garlic minced
- 2 teaspoon red pepper flakes more or less depending on heat tolerance, crushed
- ⅔ cup sugar I used Stevia
- 1 water ½ cup
- ½ cup pineapple juice reserved
- 2 TBS sweet red chili sauce find this in the international aisle
- ½ teaspoon salt
- 4 TBS water cold
- 3 TBS corn starch
Notes
- You could also serve this by itself or with noodles. You can also replace the tofu in this recipe with chicken, however adjust cooking times accordingly.
