This Furikake recipe transforms bonito flakes leftover from dashi stock into a flavorful seasoning by cooking them with soy sauce, sugar, and sake until the liquid evaporates. Seasoned seaweed sheets are torn and combined with the cooled flakes and white sesame seeds before being ground finely in a processor to create a textured rice condiment.
The resulting furikake provides a balance of salty, sweet, and savory umami notes, with the sesame seeds adding a slight nuttiness and crunch. Its ease of preparation and ability to transform simple steamed rice into a flavorful side make it a staple in Japanese home cooking.
Use furikake as a sprinkle over warm rice bowls, onigiri (rice balls), or mixed into salads or noodles, providing an extra dimension of flavor. Store it in an airtight container for preservation and sprinkle as desired.
Ingredients
- 50 g bonito flake 1, leftover
- 1 tbsp sugar natural sweetener
- 1 tbsp sake *2
- 1 tbsp soy sauce
- 2 tbsp white sesame seeds
- 3 g seaweed sheet ajitsuke nori *3, seasoned
Instructions
- Place leftover bonito flakes from making Dashi stock *1 in a saucepan.
- Add sugar, sake and soy sauce into the saucepan and cook them all together over low to medium heat.
- Stir continuously with a pair of chopsticks until all liquid evaporates.
- Once all liquid has evaporated, turn the heat off.
- Place the bonito flakes into a food processor and add nori sheets by tearing into small pieces.
- Blitz the food processor for about one minute and add white sesame seeds and pulse to combine them all together.
- Remove the furikake into a airtight container or serving bowl.
- Serve Furikake over warm rice.

- Sake can be substituted or omitted depending on availability; it helps balance umami and sweetness.
