Ingredients

  • 2 pounds baby potatoes, washed, halved lengthwise
  • 1 cup (100 g) parmesan cheese, finely grated, divided
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • Parsley, chopped, for garnish
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. Set aside.
  2. In a large bowl, combine ½ cup of parmesan, oil, garlic, salt, paprika, and pepper. Mix well.
  3. Add the potatoes to the bowl with the oil mixture. Toss to evenly coat.
  4. Transfer the coated potatoes to the lined baking sheet. Arrange them in a single layer, cut side down. Drizzle any remaining oil mixture over the tops of the potatoes.
  5. Roast the potatoes for 40-45 minutes, flipping them halfway through roasting. The potatoes are done when golden brown, crispy on the outside, and fork-tender.
  6. Remove the baking sheet from the oven. Sprinkle the remaining parmesan cheese over the hot potatoes.
  7. Garnish with parsley. Serve.
