Ingredients
- 2 pounds baby potatoes, washed, halved lengthwise
- 1 cup (100 g) parmesan cheese, finely grated, divided
- 3 tablespoons extra virgin olive oil
- 1 tablespoon garlic, minced
- 1 teaspoon kosher salt
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- Parsley, chopped, for garnish
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper. Set aside.
- In a large bowl, combine ½ cup of parmesan, oil, garlic, salt, paprika, and pepper. Mix well.
- Add the potatoes to the bowl with the oil mixture. Toss to evenly coat.
- Transfer the coated potatoes to the lined baking sheet. Arrange them in a single layer, cut side down. Drizzle any remaining oil mixture over the tops of the potatoes.
- Roast the potatoes for 40-45 minutes, flipping them halfway through roasting. The potatoes are done when golden brown, crispy on the outside, and fork-tender.
- Remove the baking sheet from the oven. Sprinkle the remaining parmesan cheese over the hot potatoes.
- Garnish with parsley. Serve.
