These gluten free bagels are made from only 2 main ingredients! They are high in protein and low in calories. They are quick and easy to make. No yeast, no boiling, and no dough rising. They are great toasted and topped!

  • 1 cup unsweetened greek yogurt
  • 1 cup gluten free 1 to 1 flour
  • 1 ½ tsp baking powder
  • pinch sea salt
  • nonstick spray

Instructions

  1. First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  2. In a mixing bowl, add Greek yogurt, gluten free flour, baking powder and sea salt. Stir to form a dough. Dough should resemble pizza dough.
  3. Lightly flour hands and surface. Roll dough into a ball. Then, press into a disc shape.
  4. Use a sharp lightly floured knife to slice into 8 equal servings. This recipe makes 8 mini bagels or 4 larger ones.
  5. Roll each slice into a small ball. Press into a disc.
  6. Poke a hole in the middle with your finger. Gently stretch and pull dough until the hole is almost 1 inch in size.
  7. Repeat for dough. Place on lined baking sheet.
  8. Spray generously with nonstick spray. Or, whisk an egg and brush on top of bagels.
  9. Bake for 25 to 27 minutes or until golden brown on top. Do not let the bagels burn.
  10. Finally, remove from oven. Allow bagels to cool for 10 minutes before slicing, serving or toasting.

Notes

  • Use unsweetened Greek yogurt.  Sweetened yogurt will add too much flavor.
  • Use gluten free 1 to 1 flour.  I used King Arthur Flour gluten free 1 to 1 flour in this recipe.
  • The dough will be slightly sticky and similar to pizza dough.
  • Lightly flour your hands, the knife and surface you are working on.  This prevents sticking.
  • These bagels will not look perfect.  That is totally fine!
  • For larger bagels, divide dough into 4 larger pieces.  You will need to add more baking time.
  • Heavily spray with nonstick spray.  Or, use an egg wash.  These methods both yield golden bagels.
  • Feel free to use seasonings on top before baking.  Everything Bagel seasoning is a great option.
  • Store bagels covered at room temperature for up to 2 days.
  • Freeze for up to 1 month.
