This Sugar Free Jelly is made with raspberries and chia seeds! It is naturally sweetened with pure maple syrup. This Vegan jelly is filled with fresh flavors and it's great for toast, pancakes, or waffles.

Ingredients

  • 2 cups raspberries
  • 3 tbsp chia seeds
  • 1 tsp lemon juice
  • 2 tbsp pure maple syrup

Instructions

  1. First, add all ingredients to a skillet over medium heat.
  2. Stir ingredients together and bring to a light boil. Stir every 30 seconds or so to prevent burning.
  3. Turn heat down to a light simmer. Simmer for 15 to 20 minutes, until jelly has thickened. Mash raspberries with a spoon if they're still intact.
  4. Then, remove from heat and pour jelly into jars.
  5. Once cooled completely, seal jars. Store in fridge.

Notes

  • If using frozen berries, thaw completely.  Then, squeeze out all excess water before cooking.
  • Keep a close eye on the skillet while cooking to prevent burning.  Stir every 30 seconds or so.
  • Mash berries with a spoon or fork for a thinner jelly.
  • Wait until jelly is completely cooled before sealing jars.
  • Store in the fridge for up to 7 days.
  • Jelly can be frozen for up to 2 months.
