This super easy Vegan Salted Caramel is smooth, creamy, and so delicious! It is made with just a few healthy ingredients and it is made without corn syrup. This peanut butter caramel is great on popcorn, ice cream, or by the spoonful!

Ingredients

  • ½ cup maple syrup
  • ½ cup creamy peanut butter
  • ¼ tsp sea salt
  • ½ tsp vanilla extract

Instructions

  1. Add all ingredients to a skillet over low medium heat.
  2. Continue whisking for 2 to 3 minutes or until sauce is thoroughly mixed.
  3. Once sauce reaches desired consistency, remove from heat. This caramel will thicken the more it cooks.
  4. Finally, pour into a jar.
  5. Once sauce has cooled, place lid on jar and store.

Notes

  • Use creamy peanut butter that is made with ONLY peanuts.  Peanut butter with added sugars or oils will yield much different results.
  • I highly recommend Teddy's creamy peanut butter.
  • If your peanut butter is salted, consider omitting the sea salt.
  • Continuously whisk to prevent burning.
  • Caramel sauce will thicken the longer it cooks.  Turn off heat when desired consistency is reached.
  • Store at room temperature.
  • This sauce is delicious when stored in the fridge, but it will thicken up considerably.  Allow to sit at room temperature before using.
  • This recipe yields approximately 1 cup of caramel sauce.
