Description

This recipe starts by sifting together self-rising flour, baking soda, and ground ginger, ensuring even distribution of leavening and spice. Chilled butter cubes are rubbed into this dry mixture to form a crumbly texture. Caster sugar is stirred in before binding the ingredients with enough golden syrup to form a pliable dough.

The dough is rolled out as thinly as possible on a floured surface, allowing the biscuits to become crisp when baked. Small biscuit rounds approximately 5 centimeters in diameter are cut and placed onto a baking tray lined with baking paper.   • 225 grams self-rising flour 1 ¾ cup
  • 55 grams caster sugar (¼ cup)
  • 85 grams butter
  • ½ teaspoon baking soda
  • 1 ½ teaspoon ground ginger
  • 4 tablespoons golden syrup (use only enough to form a dough)

Instructions

  1. Pre-heat oven to moderate (170 degrees celsius, fan forced).
  2. Sieve flour, bicarb soda and ginger together into a bowl.
  3. Chop butter into cubes and rub into dry mixture.
  4. Add sugar and stir through mixture.
  5. Add enough of the golden syrup to bind the mixture together to form a dough. Add a little additional syrup if required.
  6. Turn onto a lightly floured surface and roll out as thinly as possible.
  7. Use a small round cutter (about 5cm diameter) to cut out biscuits.
  8. Place onto a baking tray lined with baking paper.
  9. Bake for 7-10 minutes.
  10. Allow to cool.
