Ingredients
- 1 lb whole carrots peeled and cut into ½-inch slices
- 3 tbsp unsalted butter
- 1/2 cup brown sugar packed
- 1/4 cup water
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 tsp black pepper
- Fresh parsley or thyme chopped (optional for garnish)
Instructions
- In a large skillet or saucepan, melt the butter over medium heat. Add the carrots to the skillet and sauté for about 5 minutes, stirring occasionally until they begin to soften slightly.
- Stir in the brown sugar, water, cinnamon, nutmeg, salt, and pepper. Increase the heat to medium-high and bring the mixture to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until the carrots are tender and the glaze has thickened, about 15-20 minutes.
- Transfer the glazed carrots to a serving dish. Garnish with chopped fresh parsley or thyme if desired. Enjoy!
