  • 2 cups gluten-free all-purpose flour with xanthan gum
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 2 cups full-fat plain Greek yogurt
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, whisk together gluten-free flour, baking powder, onion powder, dried parsley, garlic powder, dried oregano, and salt.
  2. Add yogurt and oil to the dry ingredients and beat with an electric mixer on low until just combined.
  3. Separate the dough into 4 equal parts. Roll each part between two sheets of parchment paper to about 1/4-inch thickness.
  4. Heat a large frying pan over low-medium heat. Spray with non-stick cooking spray. Place one flatbread in the pan and cook for about 2 to 3 minutes on each side until fully cooked and lightly browned.
