Gomasio (Japanese Sesame Salt)

Gomasio is a traditional Japanese seasoning made by toasting sesame seeds until golden and then crushing them coarsely with sea salt. The optional addition of kombu or other seaweed adds a subtle marine flavor. This mixture provides a crunchy, salty topping that can enhance many dishes with its nutty aroma and texture.

Description

Gomasio (Japanese Sesame Salt) combines toasted sesame seeds with sea salt to create a flavorful seasoning condiment. The sesame seeds are toasted carefully to a golden brown to avoid bitterness, then crushed to a coarse texture so the mix remains crunchy rather than powdery. Adding a small piece of kombu or other seaweed is optional but can provide depth with its subtle umami notes. The resulting mixture can be sprinkled over rice, vegetables, or other meals to deliver a light salty and nutty crunch.

The preparation requires toasting in a dry skillet over medium-high heat with frequent stirring until the seeds achieve a golden hue. After cooling, they are crushed in a mortar and pestle or processed lightly in a blender to maintain texture. Sea salt is mixed in afterward. The gomasio can be stored in an airtight jar in a cool place and retains its best flavor for about a month, though it keeps for a few months.

Ingredients

Servings
  • 1/2 cup sesame seed Unhulled is traditional and has a bitter taste. You can also use hulled if you prefer to eliminate the bitter flavor, raw
  • 2 teaspoons sea salt I prefer flaky sea salt like Maldon for a great texture, quality
  • kombu optional, or other seaweed

Instructions

  1. Place a dry skillet over medium-high heat and add the sesame seeds.  Toast them until they are golden brown, stirring regularly. Be very careful that they don't burn or they will be bitter. Let the seeds cool completely.
  2. Crush the toasted sesame seeds either with a mortar and pestle or in a blender or food processor.  The mixture should remain chunky and not be a fine powder.  Place the crushed sesame seeds in a bowl and stir in the salt.Store your gomasio in an airtight jar in a cool place. It will keep for a few months but for maximum flavor use within a month.Makes just under 3/4 cup.
