Grilled Asian Sweet and Spicy Chicken Skewers
Description
Grilled Asian Sweet and Spicy Chicken Skewers begin with chicken breasts cut into strips and marinated in half the provided Asian BBQ sauce for 45 minutes. The marinade imparts sweet, spicy, and savory notes.
The marinated chicken strips are skewered and grilled for 3 to 5 minutes on each side, creating a nicely cooked, slightly charred exterior while maintaining juiciness. The accompanying brown rice is prepared by rinsing, simmering with water and salt until tender, providing a nutty and wholesome base.
Serving the chicken skewers over brown rice with remaining BBQ sauce allows the flavors to meld and creates a simple presentation. This dish is suitable for lunch or dinner and can be paired with vegetables or steamed greens if desired.
Ingredients
- 1 recipe BBQ sauce Asian
- 2-3 large chicken breast cut into strips
- 1 cup brown rice
- 2 1/8 cup water
- salt
Instructions
- Mix half the Asian BBQ sauce together with the cut chicken. Cover and refrigerate for 45 minutes to marinate.
- While that is marinating, rinse rice, then pour into medium pot with water and salt. Cover, bring to boil, reduce to simmer for 30-40 minutes or until rice is cooked completely.
- Once chicken has marinated, stick a wooden skewer down the center of each and grill 3-5 minutes per side or until thoroughly cooked. Serve with remaining BBQ sauce over brown rice.
