Instructions

  1. Heat a grill to medium-high heat.
  2. Place each boneless skinless chicken breast on a baking sheet or large dish and pat dry with a paper towel. Drizzle them lightly with olive oil and rub the chicken to coat evenly.
  3. In a small bowl, combine all of the spices and stir well.
  4. Sprinkle half of the spice mixture over the tops of the chicken breasts, turn the chicken over, and sprinkle the remaining half of the spice mixture on the bottom side of each breast so the chicken is evenly coated in Cajun seasoning.
  5. Place chicken breasts directly over the heated side of the grill and grill for about 5-6 minutes per side, depending on the thickness of your chicken, until the internal temperature of the breasts reaches 160°F using an instant-read meat thermometer.
  6. Remove from the grill and rest for 5 minutes.

Notes

  • To Oven Cook: Of course! Follow the instructions for coating the meat, then put the chicken breasts into an oven-proof tray or dish and cook in the oven at 450°F for 15-18 minutes.
  • Storage: Once your chicken breasts have thoroughly cooled, store them in an airtight container and in the refrigerator for up to 4 days.
  • Freeze: Put your cooked chicken breasts in an airtight container that is freezer safe, or in freezable Ziploc bags, for up to 3 months! Simply defrost in the fridge overnight and reheat in the oven or microwave.
