Homemade Almond & Peanut Butter Bars
Description
This recipe makes almond and peanut butter bars featuring walnuts, hazelnuts, almonds, cashews, peanuts, and coconut flakes for varied nutty flavors and crunchy texture. The nuts are finely ground to a breadcrumb consistency, then combined with peanut butter, honey, and cocoa powder to form a thick paste. Pressing the mixture firmly into a lined baking tray and refrigerating it chills the bars to a solid, sliceable consistency.
The bars have a chewy, dense texture with rich chocolate and nut flavors from the cocoa powder and peanut butter complementing the mixed nuts. No baking is required, making the process straightforward. Cutting into 24 uniform pieces provides convenient portions about 50 grams each, suitable for snacks on the go or a quick energy boost.
Storing these bars in a covered container in a cool place will keep them fresh. Their portable size and long shelf-life without baking make them a practical homemade alternative to store-bought nut bars.
Ingredients
- 400 g peanut butter
- 100 g walnuts
- 100 g hazelnut
- 100 g almonds
- 100 g cashews
- 50 g peanuts
- 80 g coconut flakes
- 100 g cocoa powder
- 100 g honey
Instructions
- Place the nuts together in a blender and mix until they obtain a breadcrumb-like texture.
- Add the honey, peanut butter, and cocoa powder and blend until the mix becomes a paste. If the paste is too thick for the blender, mix by hand until homogenous.
- Line a 20x30cm (7.5-11.5 inch) baking tray with plastic film. Put the mixture in the tray and press firmly. Cover with foil and refrigerate.
- When hardened, remove from the fridge and cut into 24 pieces (about 50g or 1.75 oz each).
- Store in a covered container in a cool place. Enjoy!
