  • 3 tablespoons gelatin (granulated - 3 packets)
  • 3/4 cup low-carb sweetener see above for alternatives
  • 3/8 teaspoon Stevia extract (see substitutions above)
  • 1 1/2 cups water juice could be substituted, boiling
  • 3 cups water divided--juice can be substituted, cold
  • 1 1/8 cups lemon juice
  • 1/2 teaspoon lemon rind optional, grated

Instructions

  1. Soften gelatin by soaking in 1 1/2 cups of the cold water (or juice) for a few minutes.
  2. Add boiling water (or juice) and stir until gelatin is dissolved.
  3. Add remaining ingredients (including the other 1 1/2 cups cold water), stirring until thoroughly blended.
  4. Pour into 2 8x8 baking pans.
  5. Refrigerate until set.
  6. Store covered in fridge.

Notes

  • You can use different molds like silicone hearts to create shaped gelatin treats.
  • To make firmer gelatin squares, double the gelatin amount used in this recipe.
