Homemade Okonomiyaki Sauce

Homemade Okonomiyaki Sauce blends oyster sauce, sugar, ketchup, and Worcestershire sauce to create a tangy, slightly sweet condiment traditionally served on Japanese savory pancakes. The sauce balances savory and sweet notes, offering a rich complement to the pancake's flavors.

Description

This sauce recipe starts by mixing oyster sauce and sugar until fully dissolved, creating a sweet-savory base. Ketchup and Worcestershire sauce are then incorporated, adding acidity and tang along with umami and depth. The combined ingredients yield a thick, flavorful sauce reminiscent of commercially prepared okonomiyaki sauces but easily made from pantry staples.

The balance of sweet and tangy flavors makes it suitable for drizzling over okonomiyaki or similar savory dishes. Adjusting the sugar amount can customize sweetness according to taste or ketchup brand variations.

This sauce can be stored in an airtight container refrigerated for up to two weeks, making it a convenient condiment for repeated use. Using vegetarian alternatives for oyster sauce can accommodate allergies without losing the overall flavor profile.

Ingredients

Servings
  • ¼ cup oyster sauce (76 g; I used Lee Kum Kee Premium Oyster Sauce; if you‘re allergic to shellfish, use Lee Kum Kee Vegetarian Stir-Fry Sauce)
  • 3 Tbsp sugar (39 g; or more, to taste)
  • ½ cup ketchup (136 g; to taste)
  • 7 Tbsp Worcestershire sauce (105 g; I used Lea & Perrins Worcestershire Sauce)

Instructions

  1. Gather all the ingredients.
  2. Combine ¼ cup oyster sauce and 3 Tbsp sugar in a small bowl. Mix with a spatula or whisk until the sugar is completely dissolved. Tip: I used organic cane sugar.
  3. Add ½ cup ketchup and 7 Tbsp Worcestershire sauce. Tip: I used Heinz Simply Tomato Ketchup. Some ketchup is sweeter than others, so please adjust the amount of sugar to taste.
  4. Mix it well, taste the sauce, and adjust it according to your liking.
