  • 3 pounds lean ground turkey
  • 2 teaspoons ginger
  • 4 teaspoons salt
  • 3 teaspoons sage
  • 1/2 teaspoon cayenne pepper
  • 4 teaspoons black pepper

Instructions

  1. Place the ground turkey into a large bowl.
  2. Sprinkle the seasonings over the ground turkey and mix well.
  3. Form the seasoned turkey mixture into patties (about 1/3 cup per patty). Make the patties thin. They'll shrink up slightly during cooking and end up being thick patties.
  4. Heat a large skillet over medium-high heat with drizzle of olive oil or coconut oil. Once the skillet is hot, place the patties in the skillet and fry on one side for 2-3 minutes, then flip and fry on the other side until no longer pink. Use a meat thermometer to test the internal temperature. The sausage is done when the temperature is165ºF.
