Description
In this recipe, a sauce made from soy sauce, rice wine, honey, minced garlic, fresh ginger, and optional sriracha is heated briefly to blend flavors. Chicken drumsticks with skin removed are added and cooked under high pressure for about 15 to 20 minutes, ensuring the meat becomes tender and fully infused with the teriyaki sauce. After pressure cooking, the chicken is cooked further over medium-low heat with the lid on to deepen the flavor and tenderize the meat more. Removing the lid allows the sauce to thicken to a glaze consistency. The dish is finished with a sprinkle of toasted sesame seeds and chopped scallions for a mild crunch and color contrast, resulting in drumsticks glazed in a balanced sweet and savory sauce suitable for a hearty meal.
Ingredients
- 1/4 cup soy sauce or gluten free, low sodium
- 3 tbsp rice wine
- 2 tbsp honey
- 2 cloves garlic (minced)
- 1 teaspoon ginger fresh grated
- 1 teaspoon sriracha (optional)
- 8 chicken drumsticks 28 oz, skin removed
- 1 tbsp sesame seeds
- scallions chopped
Instructions
- Combine soy sauce, rice wine, honey, garlic, ginger and sriracha in a skillet and cook medium-low, stirring for about 2 minutes.
- Use saute button, when hot add soy sauce, rice wine, honey, garlic, ginger and sriracha and cook 2 minutes, stirring. Add the chicken, cover and lock the lid. Cook on high pressure 15 to 20 minutes until the chicken is tender.
- Add the chicken and cook 5 minutes, covered. Turn chicken, cover and cook 20 minutes over medium-low. Turn again, cover and cook 15 minutes, until the chicken is very tender. Remove the cover, if the sauce isn't thick simmer uncovered until sauce thickens, about 2 minutes.
- When pressure releases, finish with scallions and sesame seeds.
