- 1 head cauliflower

Instructions
Prepare:
- Remove the outer leaves from the cauliflower and rinse under water, if needed.
- On a flat surface, slice the cauliflower head in half, then coarsely chop the cauliflower into floret pieces.
Make the cauliflower rice:
- Place cauliflower pieces inside the jar of your blender, about ¾ of the way full. Fill with enough water to just cover the cauliflower pieces.
- Place the lid on the jar to seal. Blend on medium speed, pulsing a few times, until the cauliflower has been chopped and resembles small grains of rice.
Drain:
- Drain the water out through a colander into the sink. Transfer the riced cauliflower onto a clean kitchen towel and ring out excess water.
Store:
- Transfer cauliflower rice into an airtight container to zip bag for up to 3 days or freeze for up to a month.
