Hushpuppies are delicious little fried balls made from yellow cornmeal and often served as an accompaniment to seafood.

Ingredients
- 1½ cup yellow cornmeal
- ⅓ cup all-purpose flour
- 1½ teaspoon baking powder
- ½ teaspoon salt
- 1 large egg lightly beaten
- ¾ cup whole milk
- 1 small onion finely chopped
- vegetable oil for frying
Instructions
- In a large bowl, mix the cornmeal, flour, baking powder and salt.
- In a separate large bowl, whisk the egg, milk and onion and add this mixture to the dry ingredients. Mix well.
- In a large cast iron or electric skillet, heat a large volume of oil to 350 F (175 C).
- Place the dough one tablespoonful at a time in the hot oil.
- Fry until golden brown.
- Drain on paper towels.
- Serve hot.
