Instant Pot Black Eyed Peas

These super easy Instant Pot Black Eyed Peas are soft and tender and will be ready in about an hour with no soaking required.

Ingredients
- 16 ounce dried black eyed peas
- 32 ounces chicken broth
- salt and pepper to taste
- 1 ham hock
- 2 celery stalks diced
- 10 ounce tomatoes with jalapenos diced
- 14.5 ounce Tomatoes with Green Chilies diced

Instructions
- Add black eyed peas, chicken broth and salt and pepper to taste to Instant Pot. Stir.
- Add the ham hock, chopped celery and 2 cans of diced tomatoes. Don't stir.
- Put the lid on the Instant Pot and make sure the seal is in place and the pressure valve is sealed. Set on Manual, high pressure for 30 minutes. It will take about 10 minutes to reach pressure.
- When cooking is complete let the pressure release naturally for 15 minutes. Release any remaining pressure.
- Remove any ham bones from the Instant Pot. Stir and serve.
Notes
- You can substitute diced tomatoes without chilies if you prefer less spicy food.
- This makes black eyed peas which are soft and tender. If you like your black eyed peas to be firmer reduce the cooking time to 25 minutes.
- If the final dish is too soupy for you drain it or just serve with a slotted spoon.
