Instant Pot Chili

EASY INSTANT POT CHILI made with ground beef, aromatics, tomatoes, beans, and spices. It's just as flavorful as any classic recipe and is the perfect meal for cozy weekends and easy weeknight dinners.

Ingredients

  • 1-2 tablespoons olive oil
  • 1 large yellow onion
  • 1 green pepper
  • 1 pound ground beef
  • 2 cloves of garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 and ½ cups beef stock
  • 1 (28 ounce) can of diced tomatoes, and juices
  • 1 (8 ounce) Can of Tomato Sauce
  • 1 tablespoon chili powder
  • 2 teaspoon ground cumin
  • 2 teaspoon smoked paprika
  • ground cayenne pepper (optional)
  • 3 (15.5 ounce) can of kidney beans, drained and rinsed

For Garnish

  • sour cream
  • shredded cheese
  • cilantro or green onions

Instructions

  1. Turn the Instant Pot to [SAUTE], then select More. Add 1 tablespoon olive oil to the pot. Add onion and green peppers. Cook for 2-3 minutes, stirring occasionally until softened. Drizzle more olive oil (if needed) to prevent the ingredients from sticking to the pot.
  2. Then, add the ground beef and cook until browned (about 5 minutes), breaking up the beef with a spatula as you stir. Add garlic, salt and pepper, then stir. Press [CANCEL].
  3. Deglaze the pot with beef broth, using a rubber spatula to scrape any brown bits stuck to the bottom of the pot. Add diced tomatoes, tomato sauce, chili powder, ground cumin, smoked paprika, ground cayenne pepper (if using), and beans.
  4. Place the lid back on the pot, making sure the knob is turned to the sealing position. Press [PRESSURE COOK] or Manual for 15 minutes on High Pressure. Release the pressure either manually or allow it to release naturally.
  5. If you wish to thicken up the chili, press [Saute] to cook off some of the liquid for a few minutes; or use a rubber spatula to mash the beans to the side of the pot and stir.
  6. Serve hot with your choice of toppings such as sour cream, shredded cheese, and cilantro.
