Japanese Beef Tongue
Description
The Japanese Beef Tongue recipe centers on marinating thin slices of beef tongue in a mixture of soy sauce, sake, mirin, and sesame oil to infuse savory and slightly sweet notes. The tongue is marinated for an hour to absorb these flavors. Grilling the slices over charcoal for just 30 seconds each side is key to preserving the meat's tenderness and imparting a subtle smoky aroma. Placing thinly sliced green onions on the tongue as it grills adds freshness and mild sharpness.
The texture after grilling is tender yet slightly firm, offering pleasant chew without toughness. The garnishes of lemon juice or sea salt allow for personal flavor adjustments, either adding bright acidity or gentle saltiness. This preparation method keeps the tongue as the centerpiece without overwhelming it with heavy sauces or spices.
This dish is typically served hot immediately after grilling, making it suitable as a savory starter or accompaniment for a light meal. The clean flavors and quick cooking make it practical for those wanting a distinct cut prepared simply.
