Japanese Sesame Dressing

Japanese Sesame Dressing is a smooth, savory dressing combining toasted white sesame seeds, Kewpie mayonnaise, rice vinegar, soy sauce, sugar, mirin, and toasted sesame oil. The toasted seeds provide a nutty base, while the mixture balances umami, sweetness, and acidity. This dressing complements simple salads, enhancing fresh vegetables with its creamy and flavorful character.

Description

The dressing begins by toasting white sesame seeds over low heat until a few pop, releasing their aroma. These seeds are then ground into a smooth paste using a mortar and pestle, which helps release oils and intensify flavor. The ground seeds are mixed with Japanese mayonnaise known for its rich, slightly sweet taste, rice vinegar for acidity, soy sauce to add umami and saltiness, sugar for a touch of sweetness, mirin for subtle sweetness and depth, and toasted sesame oil for additional nuttiness.

Whisking these ingredients together creates a creamy and balanced dressing ideal for drizzling over simple salads such as iceberg lettuce combined with tomatoes, boiled eggs, wakame seaweed, and sweet corn. The dressing’s texture coats ingredients well, adding depth without overwhelming fresh produce.

Storing the dressing in an airtight container in the refrigerator maintains its quality for up to a week, making it convenient for repeated use. This dressing offers a distinct sesame flavor suitable for a variety of light salads.
