Ingredients

  • ½ cup unsalted butter (1 stick), melted
  • 2 eggs
  • 1 cup sour cream
  • 1 14.75 ounce can cream-style corn
  • 1 cup corn kernels fresh or frozen (thawed)
  • ¼ teaspoon salt
  • 1 8.5 ounce box Jiffy Corn Muffin Mix

Instructions

  1. Preheat oven to 375°F. Grease a 1 ½ quart baking dish.
  2. In a large bowl, whisk together the melted butter, eggs, and sour cream. Stir in the cream-style corn and corn kernels, followed by the salt and corn muffin mix. Stir until well combined.
  3. Pour the mixture into the prepared baking dish and use a spatula to smooth the top. Bake for 40-55 minutes or until golden brown and the center is set.
