Ingredients

  • 1/4 cup Thinly sliced red onion
  • 1/3 cup (80 milliliters) fresh lime juice
  • Zest from 1 lime
  • 3 cups cubed watermelon seeds discarded
  • 2 tablespoons (30 milliliters) olive oil
  • 4 ounces (113 grams) feta cheese cubed or crumbled
  • 1/4 cup chopped fresh mint
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a small non-reactive bowl, toss the thinly sliced red onion with the lime juice, lime zest, and a pinch of salt. Allow to sit at room temperature for 15 to 30 minutes.
  2. Place the 3 cups cubed watermelon in a large serving bowl. Use a slotted spoon to remove the onions from the lime juice and add to the watermelon. Drizzle with olive oil, a pinch of salt and pepper, and toss to coat.
  3. Top with cubed or crumbled feta and fresh mint leaves. Serve immediately.
