Greek Watermelon Feta Salad

This watermelon feta salad is infused with fresh mint leaves and Greek flavors. Take one bite and you'll be forever hooked — just like I was!

Ingredients

  • 4 cups seedless watermelon cubed
  • 1 cup cucumber sliced
  • 3 oz feta cubed
  • 1/3 cup mint freshly chopped
  • 2 tbsp oil avocado or olive
  • 2 tbsp lemon juice or lime juice
  • 1/2 tbsp honey
  • 1/8 tsp salt adjust to preference

Instructions

  1. In a small bowl or jar, combine the olive oil, lemon juice, honey, and a pinch of salt. Whisk until well combined. Set aside.
  2. In a large bowl, add the watermelon, cucumbers, feta, and mint. Drizzle the dressing over it. Toss to combine.
  3. Store in the fridge covered until ready to serve. Enjoy!
