This watermelon Greek salad is a refreshing take on the classic Greek salad. Full of sweet watermelon, red onions, cucumbers, olives, feta cheese, and lots of fresh herbs.

Ingredients
- 4 cups cubed watermelon
- 2 cups cubed cucumbers
- 1-1/2 cups cubed feta cheese
- 1/2 cup whole kalamata olives
- 1/4 cup minced fresh parsley
- 1/4 cup minced fresh mint
- 1/2 red onion thinly sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- kosher salt to taste
- black pepper to taste

Instructions
- In a large bowl add cubed watermelon, cucumbers, feta cheese, kalamata olives, parsley, mint, and red onion.
- In a small bowl whisk together olive oil and red wine vinegar.
- Pour over the watermelon mixture and stir to combine.
- Taste the salad and season with the desired amount of kosher salt and black pepper.
