Katsuo Dashi (Bonito Stock)

Katsuo Dashi is a fundamental Japanese bonito stock made by steeping dried bonito flakes (katsuobushi) in water. It provides a clear, flavorful broth used as a base in many Japanese dishes. The recipe involves simmering the bonito flakes in water to extract a rich umami flavor, and the resulting stock can be refrigerated or frozen for later use. The leftover bonito flakes may be repurposed for seasoning.

Description

Katsuo Dashi is a simple yet essential stock characterized by the smoky and oceanic flavors of dried bonito flakes. By steeping ⅔ ounce of katsuobushi in 4 cups of water, the delicate layers of umami are extracted to create a versatile liquid foundation used in many Japanese soups, sauces, and simmered dishes.

The preparation focuses on careful steeping without over-boiling to maintain clarity and gentle flavor. The stock is clear and light in texture but carries deep savory notes. It enhances dishes without overpowering them.

This stock is convenient to store: it keeps refrigerated for 3–5 days or in the freezer for up to two weeks. After straining, the used bonito flakes can be saved for making homemade furikake rice seasoning or stored frozen for later seasoning use, providing a sustainable zero-waste approach.
