Keto Bagels

These Keto bagels are just as soft and chewy as regular bagels! Made with just 6 ingredients, they are ready in only 30 minutes.

Ingredients

  • 1 ½ cup / 175g shredded mozzarella
  • 1 cup / 100g almond flour extra fine. Increase to 1 ¼ cup / 125g when using ground almonds.
  • 1 egg large, beaten
  • 4 tbsp / 50g cream cheese
  • 1 tablespoon Psyllium Husk Powder
  • 1 teaspoon baking powder
  • poppy / sesame seeds optional

Instructions

  1. Preheat the oven to 180 Celsius / 350 Fahrenheit.
  2. Melt the mozzarella and cream cheese in the microwave (60-90 seconds). Or, melt on the stovetop over low heat in a non-stick pan.  
  3. In another bowl, mix the dry ingredients - almond flour, psyllium husk powder and baking powder.
  4. Add dry ingredients plus the beaten egg to the melted mozzarella mixture. Combine with a spatula, then knead with your hands until you have a smooth dough. Alternatively, mix in a stand mixer or food processor.
  5. Form a large dough ball and cut it into 6 segments. 
  6. Form each segment into a log (11 centimetres long). Lay them down in a circle and pinch the ends together to make bagel shapes.
  7. Place the bagels on a baking sheet lined with parchment paper. Sprinkle with poppy seeds or sesame seeds. 
  8. Bake for 20 minutes or until golden. 

Notes

  • 4g net carbs per bagel. Makes 6 bagels.
  • If the dough is sticky, lightly oil your hands.
  • The dough should be room temperature when it goes in the oven. This prevents the bagels from flattening.
  • The bagel shapes should be tall and the hole a decent size (check my images). When the bagels rise, they also spread a little. This way you ensure your end product looks good. 
  • If you're using coarse almond flour or ground almonds, increase the amount to 125 g / 1 ¼ cup. 
  • The bagels firm as they cool down. They can be reheated in the microwave or lightly toasted. You can store them in the fridge for up to a week or freeze them.
