  • 3 cups coconut unsweetened, shredded
  • 2 egg large, whites
  • ½ cup sweetened condensed milk sugar-free
  • 1 tablespoon Swerve Confectioners Sugar
  • 1 teaspoon vanilla extract
  • Pinch salt
  • chocolate sugar-free, melted, optional

Instructions

  1. Preheat oven to 350F.
  2. Add the sweetened condensed milk, egg whites, Swerve, salt and vanilla to a mixing bowl and whisk until combined. Add in the shredded coconut and mix until the coconut has absorbed all of the liquid.
  3. Using a small cookie scoop, scoop them onto a baking sheet lined with parchment paper or a Silpat. You can put them fairly close together, since they will not spread.
  4. Bake for 12-13 minutes or until they are lightly golden. Allow them to cool completely before dipping the bottoms into melted sugar free chocolate. Let the chocolate set before serving. Store in an airtight container in the fridge for several days.
