Keto Coconut Macaroons
Description
This Keto Coconut Macaroon recipe uses unsweetened shredded coconut combined with egg whites, sugar-free sweetened condensed milk, and a touch of vanilla extract. The mixture is whisked until the coconut fully absorbs the liquid, yielding a sticky batter. Using a cookie scoop to portion the macaroons ensures uniform size. Baking at 350°F for 12 to 13 minutes develops a golden crust while maintaining a chewy interior. The macaroons don’t spread during baking, so they keep a dense, compact shape.
After cooling, the bottoms can be dipped in melted sugar-free chocolate to add a rich contrast to the coconut’s natural flavor. Stored in an airtight container in the refrigerator, these macaroons keep their texture for several days. This recipe offers a sweet, high-fat, and low-carb dessert option with straightforward ingredients and method.
Ingredients
- 3 cups coconut unsweetened, shredded
- 2 egg large, whites
- ½ cup sweetened condensed milk sugar-free
- 1 tablespoon Swerve Confectioners Sugar
- 1 teaspoon vanilla extract
- Pinch salt
- chocolate sugar-free, melted, optional
Instructions
- Preheat oven to 350F.
- Add the sweetened condensed milk, egg whites, Swerve, salt and vanilla to a mixing bowl and whisk until combined. Add in the shredded coconut and mix until the coconut has absorbed all of the liquid.
- Using a small cookie scoop, scoop them onto a baking sheet lined with parchment paper or a Silpat. You can put them fairly close together, since they will not spread.
- Bake for 12-13 minutes or until they are lightly golden. Allow them to cool completely before dipping the bottoms into melted sugar free chocolate. Let the chocolate set before serving. Store in an airtight container in the fridge for several days.
