Keto Coleslaw (No Mayo, Sugar Free)

Here's a keto coleslaw recipe with a twist! It's the yogurt dressing with fresh herbs that take this simple side salad to the next level. My low carb slaw is ready in just 10 minutes.

Ingredients

  • 1 cup red cabbage shredded (70g)
  • 2 cups white cabbage shredded (140g)
  • 1 medium carrot peeled (60g)
  • 2 scallions green tops only, finely sliced (15g)
  • cup fresh parsley finely chopped (15g)
  • 1 tablespoon sesame seeds toast for extra flavor

Dressing

  • cup Greek yogurt 80g
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon lemon juice
  • teaspoon salt
  • teaspoon cracked black pepper
  • 1 tablespoon fresh dill chopped (4g)

Instructions

  1. Shred the cabbage using a mandoline slicer or food processor. Option to use a sharp knife if you don’t have either of these and slice finely.
  2. Make thin carrot strips using a julienne peeler or grate using a food processor or box grater.
  3. Finely slice the green parts of the spring onion and parsley.
  4. Combine the cabbage, carrot, spring onion and parsley in a large mixing bowl.
  5. In a clean bowl, mix all the dressing ingredients.
  6. Add the dressing and the sesame seeds to the coleslaw and toss to combine.

  • Net Carbs per portion: 4.6g. Makes 4 servings of 1 cup / 100g each.

  • If you omit the carrot, the net carbs reduce to 3.6g per serve.
  • Sweet coleslaw dressing: Option to add up to ½ tablespoon of allulose to the dressing.
  • Option to dry fry the sesame seeds in a non stick pan over a medium heat until golden brown. Allow to cool before stirring through the coleslaw.
  • Storage: Fridge in an airtight container for up to 3 days.
