Key Lime Poke Cake

This Key Lime Poke Cake is a delicious moist white cake filled with a key lime pie mixture and topped with whipped cream - perfect for Summer!

Ingredients

  • 1 .25 ounce box white cake mix
  • 3 ea eggs
  • 1/2 cup vegetable oil
  • 3/4 cup water
  • 1 oz can sweetened condensed milk
  • ¾ cup whipping cream
  • ½ cup key lime juice
  • 1 teaspoon grated lime peel
  • Neon green food coloring
  • 1 oz container whipped topping
  • Lime zest and slices for garnish

Instructions

  1. Preheat your oven to 350 degrees.
  2. Grease a 9x13 baking dish.
  3. In a large bowl whisk together the cake, mix, eggs, water and oil the box calls for.
  4. Pour the batter into the prepared pan.
  5. Bake 25-30 minutes or until toothpick inserted in center comes out clean.
  6. Cool slightly.
  7. Using a large straw or end of a wooden spoon poke holes all over the cake.
  8. In large mixing bowl whisk together the sweetened condensed milk, lime juice, whipping cream, lime zest and a few drops of green food coloring.
  9. Pour the filling all over cake using a spoon to get the filling into all the holes.
  10. Spread the whipped cream evenly over the top of the cake.
  11. Garnish with more lime zest.
  12. Refrigerate at least 1 hour.
  13. Slice and serve!

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • You can use regular lime juice if you cannot get key lime juice.
  • You can use a yellow cake mix if you like.
